I have strong opinions about smokers. I've ruined briskets on bad ones and made competition-quality bark on cheap ones that surprised me. After 8 months and 80+ lbs of beef, pork, and chicken, here's what I actually believe about which smokers are worth your money.

We tested pellet grills, offset smokers, charcoal bullet smokers, and electric boxes. Every unit was pushed through at least one 12-hour brisket cook — because that's where smokers separate themselves. Anyone can smoke ribs. A real brisket exposes every weakness.

Temperatures were logged every 15 minutes. Smoke rings were measured and photographed. And we were honest about how much each unit required us to babysit it, because that matters as much as the results.

How We Tested

  • All smokers were purchased at retail price. No manufacturer samples. We bought everything ourselves because money on the line makes you honest.
  • Each smoker completed a minimum of 8 full cooks including at least one 12-hour brisket session. We used a calibrated dual-probe thermometer to log temperature every 15 minutes and measured how long a full charcoal load lasted.
  • We evaluated smoke ring depth, bark formation, moisture retention, and — most importantly — how annoyed we got managing each unit over a long cook. Smoke flavor is subjective. Annoyance is universal.
